CHOCOLATE CHRISTMAS LOG

This is the perfect cake for the festive table...

chocolate log




serves 12 to 14

For chocolate roll :
4-eggs
120 gm -powdered sugar 
100 gm- cake flour
1/2 tsp backing powder
2 tsp vanilla essence

prepare a swiss roll tin with butter paper and grease well. prepare a swiss roll batter with 2 eggs and mix all other ingredients one by one and pour  cake batter into tin and bake for 15 min in preheated oven at 180c till done.
Remove from oven and unmould from tin along with paper on a surface dusted with some icing sugar .Immediately invert cake again paper side down . Roll up cake in the same paper and leave to cool.
For the cream icing :
300 gm- fresh dairy cream 
3 tbsp- powdered sugar 
3 tbsp- cocoa powder
40 gm - chocolate melted

for cream icing beat cream and sugar till soft peak form. melt the chocolate and remove from heat. Add cocoa powder to it and mix well . After it cools, add to the whipped cream and beat again till stiff .
Unroll the sponge roll , spread with the cream filling mixture(keep remaining aside) and roll up again from the long end .
Soak log with the mixture of 1/2 glass milk , 2 tsp sugar and rum/brandy optional .
Now to decorate:
spread remaining mixture on top of the log to cover it properly .With the help of the fork make lines so that they resemble a log.
Decorate it with fondant flowers and leaf and enjoy the delicacy of chocolate yummmy chocolate log
