CHOCO LOB-DOB PUDDING

Its almost one and half month and i have not been in touch with you all. I am really sorry for that, actually i was out for winter vacations with my family and really enjoyed ........Now i am back for work and wanted to share some recipes. Today's  special recipe  is CHOCO LOB_DOB I gave the pudding this name because this pudding is full of chocolate and is a great treat for real chocolate lovers ....
This is a type of parfait with a little creamier difference, do try this exotic pudding...


SERVES -7 
chocolate sponge cake 
6 large egg, separated
4 ounces (120 grm) semisweet chocolate, chopped
1/4 cup (50 grams) plus 2 tablespoons (30 grams) granulated white sugar 
1 teaspoon pure vanilla extract
3/4 teaspoon cream of tarter 

For chocolate parfait ..
3 tbsp unsweetened cocoa powder
4 tbsp boiling water
150 gm bittersweet chocolate, broken into squares
4 egg yolks
1/2 cup super fine sugar 
1/2 cup water
1/4 cup double cream
4-5 tbsp brandy
For cream and dry fruit layer ..
250 ml fresh cream
1 cup icing sugar
dry or caned fruits as required of your choice 
" I use pineapples, apricots, raisins, carries and some time truti fruity. choice is yours.you can use dry fruits also.

How to start now???

For cake...simple recipe but very nice and tried and tested ..

Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the center of the oven.
 Butter, or spray cake pan with a non stick vegetable spray. Line the pan with parchment paper and then butter and flour the paper (or spray with vegetable/flour spray.
While the eggs are still cold, separate the eggs, placing the whites in one bowl and the yolks in another. Cover with plastic wrap and bring to room temperature before using (takes about 30 minutes). 
Meanwhile melt the chocolate in a stainless steel bowl placed over a saucepan of simmering water. Let cool to room temperature.
In the bowl of your electric mixer (or with a hand mixer) place the egg yolks and 1/4 cup (50 grams) of sugar and beat, on high speed, until this mixture is thick, light and fluffy (about five minutes). (When you slowly raise the beaters, the batter will fall back into the bowl in a slow ribbon.) Beat in the vanilla extract. Add the melted chocolate and beat only to combine. Set aside while you beat the egg whites.
In a clean mixing bowl,  whisk the egg whites until foamy. Add the cream of tartar and beat at medium-high speed until soft peaks form. Gradually beat in the remaining 2 tablespoons (30 grams) of sugar until stiff peaks form.
Gently fold small amount of the egg whites into the egg yolk mixture using a rubber spatula or whisk to lighten the batter. Fold  in the remaining whites just until incorporated.  (Don't over mix or the batter will deflate.) Spread the batter evenly into the prepared pan with the back of a spoon, or an offset spatula. Bake until the cake is puffed, has lost its shine, and springs back when gently pressed, about 15 -17 minutes. Remove from oven and place on wire rack to cool. 

For parfait..

Mix the cocoa to a paste with the boiling water. Melt chocolate in a double boiler. whisk the yolks until frothy.
Heat the sugar and measured water gently in a small pan, stirring occasionally until completely dissolved, then boil for 4-5 min without stirring until it make soft ball by dropping a little syrup into cold water.
quickly whisk the syrup into the yolks. Lift the bowl of melted chocolate off the pan and continue whisking until the mixture cools slightly.
Whisk in the cocoa mixture then fold in the melted chocolate. Whip the cream lightly and fold it in,along with the brandy.

For cream and fruit layer..

whisk full fat cream and icing sugar until thick add fruits in it.

How to assemble...

Quickly take a glass bowl or chocolate cups and start assembling..
first layer- cut cake into squares and make first layer soak this with little orange juice .
second layer- pour 1/2 of the parfait mixture on cake layer .
Third layer- whipped cream and fruit layer 
Repeat the same once again 
Top it with chocolate curls and candied fruits and serve chilled .
